Better for you Pizza!

​Homemake Pizza with "00" Flour

Ingredients:
  • Active dry yeast 1 1/4 tsp.
  • 1 cup of warm water (100-110) 
  • pinch of sugar
  • 3 1/2 cup of 00 italian flour-have used jovial all purpose, moline grassi, and caputo Chef's flour soft wheat tipo 00  (these are easier for my body to process than American wheat) Save 1/2 if the dough is wet
  • tsp of salt
  • tsp of olive oil
Instructions
  1. in a large bowl place a coup of warm water and mix in yeast and let sit for 15 minute. It should turn a bit cloudy and gassy. Sugar and salt help speed up process.
  2. Stir in salt and three cups of flour and knead into dough ball forms. Be sure to add a bit flour if dough is too sticky.
  3. Form dough into a ball and coat with olive oil.
  4. Cover bowl with plastic wrap and let rise in room temp. Can be used in 2 hours or even longer. I prefer to make dough the night before. It should double in size. Made 4 medium size pizzas. You can also cut in half and freeze.
  5. Place a 15 inch parchment paper on counter and generously flour paper to work and roll out dough.
  6. Spread some olive oil on pizza and add marinara sauce and desired ingredients. Best is fresh mozzarella, basil and tomatoes. But have used pancetta, figs, and brie. Or your tradition pepperoni and aged mozzarella with a touch of Parmesan. Personally. i love a lot of veggies like peppers and mushrooms, onions fresh garlic and ham. I've also used olive oil, pesto, chicken and feta and arugula.
  7. Have fun and make it a family event.
