4 cup rolled oats
2 cup almond butter
1 cup maple syrup
1 TB vanilla extract
2 cup unsweetened coconut flakes
2 cup bittersweet chocolate (I've used dark chocolate too, yummy)
1 tsp kosher salt if you've used salted almond butter then don't add
Combine everything in a large bowl, and mix until everything is well coated, and the mixture holds shape when pressed into a ball. Scoop onto parchment and chill to set up. Refrigerate or freeze to keep longer.
