Exercise for the Week

Great low body exercise that that focuses on glut max muscles
To perform: Start in a wide stance position. Engage core and glut muscles. Keep torso neutral and lower dumb bells to the floor. If feeling your lower back or hamstrings are tight, soften knee. Hinge hips back.
Return to standing. Then step right foot forward into a lunge making sure you are driving from the heal and back of the front leg, return to standing

Salad of the week- Beet Salad

Beet Salad ingredients:
  • 2 lbs candycane and/or golden beets *
  • 1/3 cup red onion, very finely chopped
  • 1 garlic clove, finely minced, or put through a garlic press
  • 4 tablespoons
  • 2 tablespoons  Muscat Champagne from trader joes. (red wine vinegar or apple cider)
  • 1 orange (2 tablespoons zest and 4 tablespoons juice)
  • 1/4-1/2– cup goji berries or craisins
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cilantro, chopped, tender stems 
  • 1/4-1/2 –1 cup pistachios
  • 1/2 cup feta, or crumbles
  • Optional Garnish: For a festive twist you could top with pomegrante seed!
*I used the pre-roasted I made for beet hummus ( cover with a tbsp of olive oil parchment paper over cookie sheet for 40 min on 400 f) You can also use Trader Joes ready to use packages one. 
Instructions:

Combine red onion, garlic, olive oil, vinegar orange zest and orange juice, goji berries, salt and pepper and mix in large bowl and mix. Then add cilantro pistachios, feta and gentle toss.
