Camila's No Mayo Coleslaw

​This week, I am sharing this amazing coleslaw from Women of Today. No mayo.... What?!

Ingredients
  • 1 green cabbage
  • 1 large red apple julienned or thin sliced  (I used Granny Smith )
  • 1/2 or 1/4 red red onion thinly sliced (the amount depends on the size of your cabbage )
  • 3 tbsp coarsely chopped mint
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp  apple cider vinegar
  • 1-2 tsp white wine vinegar
  • salt to taste
​Instructions
  • Finely shred the cabbage using a mandoline. If you don’t have one, use a sharp knife and shred as fine as you can! The thinner the cabbage, the better this will taste. 
  • Combine all the other Ingredients and mix together in a large bowl. Taste it as you go to see if it needs any more acidity, moisture or salt!
  • Can be served right away... or it gets better next day!

Podcast Movement in Nashville!

​Adriana traveled to Nashville last month to further explore the world of podcasting.
​
"The most important thing I learned is that we all don't want the same thing: in life, in careers, fitness and yes, even in podcasting! There are so many different types of podcasts out there, covering any topic you can imagine, even tequila reviewing in Tequila Aficionado. I took workshops on interview styles, editing, empowering women through podcasting, the movement to podcast in Spanish, making podcasting your career, and so much more! I met so many great people, and learned so much. 

As for me, well, my goal is to connect and bring our community together and inspire us to take on self care and strengthen our minds, spirits and souls as well. Let's shed those limiting beliefs we all have and enjoy freedom on a whole new level. It's great to see some podcasts out there that talk about mental health, death, and relationships through great story telling. I try to integrate all of that into my podcast. It was great having an amazing menu of workshops and opportunities to network, along with access to virtual sessions even after the convention was over."
