I tried this at a delicious restaurant in Fremont called Turko Cafe, rainbow hummus. This I seen a recipe for in a fitness magazine, Strong Fitness, I realized it was fate!: I just had to try making this! Ok after lots of modifications this is it!
makes about 52 2 tbsp servings 20 min prep time even less if you buy the cooked beets from Trader Joe’s . You can slip that step altogether. Ingredients: 3 cups of steamed beets 3 1/2 tsp of lemon juice 1 garlic clove 1 1/2 tbsp of balsamic vinegar 2 tbsp of olive oil 1 1/2 tbsp of coconut oil melted 1/2 c of tahini 1 tsp of salt 1 tsp of cumin (optional) black pepper and cayenne to taste Blend all ingredients in a high powers blender and volá! Enjoy with some sliced cucumber, peppers, asparagus!
