Tomatillo sauce (which can be used for pozole verde, menudo, chilaquiles) Ingredients: 1-2lbs of tomatillos 1 yellow onion (only hard red) and used for garnish 1/4 cup of chopped cilantro or less 1 seeded jalapeños (leave seed if you like them spicy) 1 seeded serrano pepper 1 tsp of cumin 4 garlic cloves 4 cups of chicken stock (used tsp of better than bouillon) 1 tsp (to taste) salt and pepper Instructions: Boil 6 cups of water add tomatillos, onions, peppers, garlic on medium for 10 minute. (tomatillo will turn a yellow/green color) Remove and put into blender with half the broth and the rest of the ingredients and add better than bullion. Serve or add to pozole or other dishes) also used for salsa with chips For Pozole: Served 7-8 people I made a whole organic 6 bls. chicken in the instant: use this recipe before hand it was frozen and this recipe came out awesome. https://ifoodreal.com/instant-pot-frozen-chicken/ Instruction for Pozole: Used 4 cups of the broth for 2 batches (pork and chicken pozole as well. (instant Pot is 10 qtr) 4-6 cups of water for (each pork and chicken) depending of you like it thick like a stew or more like a soup. 30 oz of Hominy (used half for 3 lbs of pork and 3 lbs of the chicken) 2 garlic cloves (minced) for each batch 1/2 yellow onion for each batch 4 tsp of better than billion pour half the batch of green sauce in Instructions; Saute pork in 1 tbsp of olive oil and cut pork into 2 inch pieces (to cook faster). Add 8 cups of brothe and better than boullion half the can of hominy and 2 garlic cloves and 1/2 onion and pork into pork or chicken. Turn off sauce and pressure cook for 15 minute. Release for 5 or natural if you are not serving right away. Garnish with: 1/2 head of thinly sliced cabbage cilantro onion sliced radishes limes crushed peppers (for spice) salt and pepper to tasted warm corn tortillas on the side Great dish and our New Years tradition. Enjoy any time. Add your own variations of thickness and toppings. For chilaquiles: Lay 1-2 handfuls of corn chips and toppings with shredded chicken and pour sauce over.
